I have not seen those either. Looks interesting. A lot of fat and protein. I would try it if I saw it. I sometimes use konjac noodles. They are mostly a kind of fiber and have not nutritional value at all.
As for soy, you can look it up but many thinks it is very modified and also may contains some estrogen-mimicking compounds that could be a worry.
Soybean curds are tofu. I think it is OK if you have it once in awhile but it is up to you

The konjac noodles are pretty good I think.. But no protein like these noodles. I also stay away from soy... Except soy sauce is so Damn delicious with sushi. 😞
