Just scrambled egg whites with mushrooms and spinach. The pancakes are super simple and the best recipe I've come up with so far. Recipe is: 1/2 carton of egg whites (5x3 tbsp), one scoop of quest protein, & around 150g of pumpkin. Sprinkle cinnamon in before or when cooking. Whisk together, it usually makes 3 medium or 2 large pancakes. They're very moist. I usually use Walden farms syrup but this is carys sugar free syrup since I had it. Very thin but does the job. Also a little whip cream is never a bad thing. 🥞

81P, 28C(22net), & 3F. 22.5 carbs are from protein(4), pumpkin(12.5), & syrup(6). I've also used an egg or two which only makes them taste better.
