Too funny! But you also didn't gain that weight in straight fat. Your body holds on to water with the carbs.

I suppose kpw, too bad the scale doesn't do much of a difference :/. Love potatoes too lula, my favorite is boiled with cheese and ham , but I guess I have to pay attention to my portion sizes :|

lol! I'm a potato junkie too. Mine is mashed with butter and cheese. Luckily for me...or maybe unluckily...mashed cauli tastes just as good. Who knew? Still got to watch the butter and cheese, though.

I've never tried cauliflower like that.. sounds like something I would take a try though, I'm gonna get me some of those next time I go for groceries :)

Oh, Lord, yes. It's great. I buy Schwan't mashed cauli. But i've seen several recipes for making your own. which i'm going to start doing because Schwan's has way too much...well, everything. All i know is that you have to boil or steam it really well to get a good texture. and really, i no longer try to equate it to mashed potatoes because the texture is a bit different, but i think just as good and works for me as a comfort food type replacement.

@warrenwinter, i'm not sure why the jurnal posts aren't showing up on the feed. Wonder if there's something i need to turn on or off in my profile. I do recall that the entries were to be shared. I'll check it out. and yep! love me some hummus. my fav is Sabra's roasted Red pepper. I have to count it though so i'm gonna have to go it alone with my veggie munching.
