Many mushrooms have lots of water. Dry frying and hot grilling are great ways to get rid of that moisture. And butter is also the fat rhey need. 🍄😋

How does the flavor of a chanterelle taste in comparison to portobello? I almost bought some at Costco tonight but I’ve never had them and am not prepared with a recipe... plus I have about 3lbs of portobellos I plan to make into a mushroom chicken soup.

Taste of chanterelles and portobello/crimini totally differently. Properly prepared, chanterelles have a better texture and are more floral. Great dry seared and finished with shallots, butter, orange zest, parsley. Criminis have an earthier flavor and are great in duxelles
