I should have cut them open for a better picture but I was so ready to devour them🤦🏻♀️😂😋😋😋 damn they we’re good!! They are called Texas Twinkies. Check out FullaBella pics omg. Once I saw her post it was all over lol

These look wonderful! I picked up some fresh peppers yesterday to make 1/2 dozen this week; they are one of the few things I'll food prep as they are a great go-to when hungry. I did NOT see any huge red peppers like yours at our grocer.. darnit. I love the avocado in there - I bet that was a fantastic 'umami' (Key!!) taste. Everytime I make these, esp with the discussion about them this weekend.. I think of different ways to do them. Right now.. I'm wondering about stuffing with scrambled eggs & onions. Something to try!

Yeah...or maybe some smokehouse cheddar even? I'm wondering if I sauteed some radishes with the eggs if it'd give it a better consistency to hold up in baking. What else could we add? The possibilities are endless!!
