Back on horse this week. Fasted 19 hrs. Cooked up some food. Cabbage and blackeyed pea soup with chicken sausage, rice and peas and creamed spinach. I made the spinach for NYE fancy steakhouse dinner at home, and now i can't stop making it!

Jen, is there a recipe you could share for the creamed spinach?? I’ve never had it or heard of it, but it looks and sounds delicious and I love spinach!!

@wifey, i basically used the following recipe. I tweaked it by using half & half in place of milk and cream, and i added a lot of nutmeg and cayenne. Add more spinach than you think would be possible. Keep adding spinach. Also i didn't pre-coik it. Just wilt it in the sauce.

Oh, also I substituted neufchatel cheese for full-fat cream cheese to lighten it up. You could also use Laughing cow light. I put it in my cookbook here and it comes out to ~150 calories a serving, so not horrendous, just high in fat.
